Ready-to-bake Viennoiseries

After an oven malfunction on the morning of a Pop-up Pâtisserie, I began selling ready-to-bake viennoiseries. Now that my oven is repaired, customers continue to order the pre-shaped croissant dough to bake from the comfort of their own kitchen.

Ready-to-bake Viennoiseries are available for preorder-only, including all weekends when viennoiseries are on the Pop-up menu.

Baking instructions:

  1. Preheat your oven to 340F convection/ 365F standard.

  2. Brush a thin layer of egg wash on top of the viennoiseries and leave them to sit at room temperature while your oven preheats.

    *Egg wash is one egg mixed with 1 TB water.

  3. Bake for 30-45 minutes.

    *The viennoiseries are done when the edges are rigid, and they are golden in color on the top and bottom.

Baking tips:

  • Keep your viennoiseries refrigerated until ready to bake.

  • Use the parchment paper provided to easily transport the viennoiseries from the box to the baking tray.

  • If you need to reposition your viennoiseries, gently lift them from the bottom.

  • Viennoiseries should be baked the day of purchase.
